Position Tracking is the correct tool because it's designed to monitor the daily ranking performance of a custom list of keywords for any domain. After discovering valuable keywords using Organic Traffic Insights, you would add them to a Position Tracking project to continuously track their visibility, estimated traffic, and SERP features. Keyword Difficulty provides a metric for how hard it is to rank for a keyword, but doesn't track performance. Keyword Overview gives a snapshot of a keyword's metrics, not ongoing monitoring.
